Vegan Banana Bread (Posno)

Ingredients

4 ripe bananas1/4 cup oil1/4 cup non-dairy milk (i.e. soy, almond milk)1/2 cup brown sugar2 tsp. vanilla extract2 cups plain flour1 tsp. cinnamon1 tsp. baking powder1/2 tsp. saltSliced banana for topping
Method
1. Preheat oven to 180 degrees Celsius
2. Line loaf pan with baking paper
3. Roughly mash bananas in a mixing bowl, then add sugar, oil, vanilla, and milk and combine
4. Sift in flour, baking powder, salt and cinnamon and mix with wooden spoon
5. Pour batter in to loaf pan and top with sliced bananas
6. Bake for 45 minutes or until golden brown
7. Butter with Nuttelex (dairy free margarine)
